Ok Texas boys, we just ordered 100lbs of Dobesh sausage seasoning. But not sure best way to make them. Got 50lbs mixed up and have it resting in fridge. Going to stuff them tomorrow. My question is are these brat sized or longer? What's the best wood to use when smoking and what temp should I smoke at? Thanks for any help here!

I didn't know what Dobesh was, appears it is a seasoning mix, you can stuff it however you want then smoke/freze/dry/cook etc.
It's hell eatin em live

Pretty sure Allied Kenco sells Dobesh's line of seasonings. They have a decent smoke schedule for time & temp on the "how to" section of their website.

Thanks Kentucky Native. I'll go check there. That is where I bought the seasoning but missed the "how to" The seasoning is delicious. After mixing it up I pan fried a couple patties for samples and it was great! Gonna stuff them today And smoke them up tomorrow
