Never heard of it but thinking about it wouldn't be all that hard to do. I have made homemade pickled sausage and eggs and have seen people make homemade baloney, not a big deal. Recipes for both online, just would need to substitute venison for beef in the baloney and then baloney for sausage in pickled sausage. Only issue I can think of is that baloney may tend to fall apart in your brine without some kind of casing to hold it together. Then you'd have more of a pickled meat mush. What the heck though, worth a shot.

Pickled balogna is common in every groceru store in kentucky. Its a staple in ol time farmers lunches, along with an extra helping of hardened arteries
