Starting to work on loads for a new round. Do you guys start with the bullet just touching the lands or come off a bit. I'll normally come of .003, figure out my charge then play with the seating depth. Am I doing it wrong?

That plan will work fine. There are several ways to "skin that cat". Either way, you are going to look for max charge or seating depth first, then figure out the other half.
Are you going to pull those pistols, or whistle Dixie?
