Wasn't gonna cook but changed my mind last minute. Was gonna add some roasted quail but have kid stuff going on. Not pretty but pretty darn tasty.

I made them. Uncased the boudin & put in bowl, scooped out and made the balls - stuck in freezer for a bit....double battered in egg/milk wash/ flour and fried em' up. I always buy them in South La, first time I ever made them and DANG sure won't be the last. grin

I normally make my own, but this time I saw a jar of "Slap Ya Mamma" etouffee roux at HEB. I'm a believer in trying before bashing so I took a swing. It's good, but not home made. Can tell the difference.

Not this time, these came from HEB. They are good La crawfish tails not that imported crap. I normally boil extra crawfish so will have enough to peel for a number of dishes.

We just got back from New Orleans yesterday. Stopped at Billy's just west of Layfayette and stocked up on boudin balls and boudin. That area makes the best boudin anywhere. The pepper jack boudin balls was great also. I bet we ate some type of gumbo everyday this week...dam good stuff.

Yes Billy's is good, I'm headed back that way tomorrow. Sometimes the line is rediculous though lol. Their boudin balls are awesome and they also serve some little eggrole looking things that are stuffed with boudin & pepper jack that are out of this world!
