If anyone has done a deer roast in a sous vide, then smoked it, what was your temp and time in the sous vide?
Been seeing 24-48 hours at 135° for a Chuck roast. Would it be the same for a deer roast? I am using a 4# roast.

I found 1 for an actual venison roast. 24 hours at 135°, then low smoke for 2-3 hours,Then sear.

From everything I've read about the sous vide it's better to do all your smoking and searing after.

I've used this thing twice and am really impressed with the results so far.

Definitely smoke/sear after the sous vide. I think you are on the right track with the recipe you found.

Next time I will set temp at 130° and shove a couple slices of thick bacon into roast.
Taste was great, meat was more towards medium after smoking. Modifications will be made.

Yes. Got it for Christmas, so still learning.

One thing I have found out, if doing a big cut of meat, plan ahead by maybe a couple days. Some can take 48 hours or more in the bath.

Flavor was really good. Finished it off with a peach and orange glaze.
Put salt,pepper,garlic,thyme and rosemary on roast for the water bath.

I've done a Chuck roast and fajitas prior to the deer. Beef was awsome, fajitas were the best I've ever had, dang near melt in your mouth.

4# ribeye roast will be next on my list, probably this weekend.
