I plan to clear out last year's steaks and make jerky using a jerky dehydrator machine. I would appreciate any suggestions for seasoning, store bought or homemade.

I like the Hi Mountain Jerky hickory seasoning. I usually add more black pepper to mine as I like more pepper on my jerky I bought mine at Academy Sports. It has the recipe broken down to where you can do most any amount of meat. The entire box will do 15 lbs.

I second Cabelas. I typically mix peppered with teriyaki.

if you can get your hands on Emporium Spice jerky seasoning, it may be the best ever.

i user Hi Mountain original, i add crushed red pepper flakes for heat though. I tried the cabelas and did not really care for it that well.

I go to HEB Grocery and purchase the "Allegros Marinade" in the "hot and spicy" bottle. Get your sliced meat and fill a gallon zip-loc bag with the meat. Get a small pot and add a bottle of Allegro's, 1/2 cup brown sugar, 1/2 teaspoon of pink quick cure, 1 teaspoon of garlic powder and 1 tablespoon of Uncle Chris' steak seasoning. Stir well. Pour into zip-loc bag full of meat and marinade 2 days in your refrigerator. Flip bag several times during the marinade process. Take meat out of bag, paper towel dry and add course pepper then smoke.

I've used the HI Mountain with good results, but feel free to add other flavorings into it as well. The curing salt used in these mixes gives you a longer shelf life of your product, compared to just putting home made flavorings in the meat. I like to add a little jalapeno to mine and you can get the powdered versions of it at places like Bass Pro, etc...
