What is a good duck marinade you've found for divers?

Best way I've found to grill divers is a steak marinade I prefer a hot and spicy one. Tenderize the breasts and place them in a bag with a generous amount of any steak marinade and let that sit over night and grill them that way. If cooked right it comes out similar to a steak. If you let them sit over night, it just tastes like whatever the marinade is. I normally dont grill anything other than puddle ducks but I have done divers that way.

Marinade the diving duck in any of the above. Throw on a steak. Cook the ducks to rare-medium rare. Throw the ducks out and eat the steak.

Get back in the kitchen and chop some onions. You don't want to make your wife angry.

I'd rather take a beating then toss out game I've harvested.

I met up with txduck24 at Bubbas in Seadrift, Texas last night. He brought some of his duck and the restaurant fried them. Outstanding!!! They fried it in finger size portions with gravy on the side. These were redheads. Until you try it, I can't begin to describe it.

My road trip duck when I have to eat it to stay in my possession limit.

I use Teriyaki baste and glaze over each duck breast half. Not the sauce or marinade, its the sticky gooey stuff. I Cook it long enough to caramelize on the meat. I like to sprinkle it with coarse ground black pepper just before or while placing on grill. Cooked over mesquite, hardwood, or charcoal preferred. I have put the duck in a ziplock covered with the glaze for 12 to 24 hours as a marinade or used it right away. Since it caramelizes on the meat, it really does not seem to matter other than time saving having it ready for the grill in advance when coming into camp from an evening hunt.

I also like to cut the breasts into 3 strips per breast half and place in a ziplock in the cooler. Liberally add some Zesty Italian Salad Dressing in with the meat as an overnight marinade, then when ready to cook, wrap a full piece of bacon around the length of each strip held by toothpicks. Add sliced pickled or cut peppers of your choice under the bacon wrap if you like, then grill till the bacon is cooked to your tastes. The duck will be done well enough when the bacon is done.

Both are good for Divers and Mergansers in that the first one ends up tasting like Peppered Teriyaki Jerky and the second one like Bacon. Best served with Steaks and Eggs. Pictured with two filleted Hooded Merganser breasts.

Shhhhh people might start shooting them if this gets out. I love it when people they don’t shoot divers because there nasty to eat. Lol

I’ll take them all.


But far as marinade

If we grill them we soak them in Italian dressing for a couple hours. There outstanding

Red Heads and Cans are only divers we try to shoot-few blackjacks if real slow. I do agree with the top post best way to cook divers is with the steak ......

Soak the breasts in milk for a couple hours. Tenderize them and season with salt/pepper/garlic powder. Cut into 1x1 inch pieces, cut onion the same size and wrap both in bacon. Raspberry chipolte marinade and on the grill. Best duck I've ever had.

This season I made two pots of gumbo. One had a blue bill and a redhead. The other pot had two wood ducks. The wood duck pot was lacking that full duck gumbo flavor like the redhead and the blue bill pot. From now on woodroes go on the grill only and the divers to the gumbo or steak fingers like we had the other night.

Here you go Hopedale, step-by-step instructions on the best ringer dinner recipe. up

Step 1: Breast ringer, get skin off, this is the hardest part.

Step 2: Put plastic bag on breast, and smash it with rubber mallet, then cut up real good with a knife, this will help to digest ringer.


Step 3: Put mixture in a bowl..


Step 4: Add 1 cup of dried dog food (high quality)..


Step 5: Mix well, and watch them go crazy over it. smile ani

Guy, you ain't kidding.

Both dogs came over to see what I was doing when breasting out my birds.

I tossed each a sliver of ringneck and that was it. They were glued to me.

Apple cider vinegar and teriyaki sauce. Cook Med rare, top with butter, salt and pepper right before plating.

Or

The old tried and true bacon, jalapeño and cream cheese wraps. Then it doesn’t matter what kind of duck it is.

I love divers although I have never shot and don’t plan to shoot mergansers. I will take a ring neck, redhead or canvasback any day. I usually cure my ducks breast up for four days, then breast out and brine for one hour. I mix this marinade and alternate between Worcestershire and teriyaki.

I normally butterfly the breast and marinate for up to four days. Cook medium rare and enjoy.
