I picked up a box of breakfast sausage seasoning from Cabelas recently and 2 lbs of beef fat from a meat locker.

I have a meat grinder that I have never used.

I'm going for it tomorrow, any suggestions.

I am using deer meat from a deer this year.

Never done this before.

This is home brew, send it!

I mix my meat 50/50 with pork roast, run it through the grinder a couple of times. Mix in some seasoning and cook some to taste. Keep mixing, cooking , and tasting until you get it like you want. Good luck

have your meat almost frozen for grinding. It will come out much better and go thru the grinder easier. I've never used beef fat but normally mix 2lbs of venison and 3lbs of ground pork for breakfast sausage. If you bought the Hi Mountain box, it is very mild. I can easily mix half again the amount of seasoning they recommend. I use one of the dish washing tubs from WalMart to mix 5-6 lbs at a time. (That's all it is used for) Point being, use a container that is at least twice as big as you think you'll need.
ETA, cut your meat into inch and a half or so cubes. Add and mix seasoning then grind thru medium plate then fine plate. It is much easier to get the seasoning evenly dispersed this way.

Ok, I will.

Meat was put out to thaw maybe 20 minutes ago

I estimate I put out 10 lbs, I don't know if 2 lbs of beef fat will be enough Dink.

But I am gona roll with that and see.

The cubing the meat idea was good, thanks

I bought beef fat to mix with deer meat.

If that's not right please lemme know.

I plan to start around lunch but I have time to go and get something if I need too

I have never tried this

Sure you can, as mentioned earlier a pork roast or ive used pork stew meat ina pinch but I donít think you want to use beef in breakfast sausage. Jimmy Dean uses pork!!

I think I would grab a pork butt (shoulder) for the sausage and mix it 50/50 with the venison. Even that will still be pretty lean for sausage. If you mix a little more pork than venison you would have some venison left. You could use about 4-5lbs with your 2lb beef fat for some great burgers.
I think your sausage would turn out better and you'll have the burgers as a bonus

I think you'll be happy with both. If you still have venison left after this, mix it 50/50 with some more pork and I'll send you my recipe for venison meatballs.
Good luck on your hunt this evening and your sausage will be better after it sits a day or so anyway.

I went and found a 6lb pork butt.

I think I have it at 50-50

I put the rest of deer meat back in freezer

That's just a pic, there was more meat added before I was done dicing

About to run it thru for 2nd time

BEEF fat covers any gamey flavor in meat MUCH better than pork fat does. i mix only beef fat a make all kinds of sausages with it including breakfast.

Go for it, right after you finish the grinding and adding the spices, fry up a couple of patties to check the seasoning. If it is good, pack and freeze, if not, you can adjust seasoning by adding more of what you think is missing. Keep track of what and how much seasonings you add, it sucks when you make the perfect mix, and cannot repeat it.

The basics of the most sausage seasoning is sage, salt, pepper and garlic powder. Have extra on hand to adjust the taste.

Well, we are done.

I haven't tried any yet.

But we made right at 55 patties

We put them on wax paper at about 15 each wrapped them and put them in big ziplock bags.

I will eat some in a few days or maybe this weekend.

About to head to deer stand. Thanks for all the replies!

Thanks DC, the Cabelas stuff came in 2 packages and said it was enough for 24 lbs.

I estimated I had 12 lbs of meat diced up. I used 1 package.

I Think it will turn out good
