So I finally quit being snobbish regarding pellet poopers and got me a Rec Tec to see what the hype was about. This thing is legit. I foresee myself smoking a lot more considering it can be up to temp in less than 5 minutes. Got some homemade bacon on their right now to season her up. Has only been one day and I'm already hooked.

You should try cold smoking. I have 20 lbs of pork belly curing right now (bourbon brown sugar cure). It will be ready for cold smoking in a few more days.
