I'm relocating to Houston in a couple of weeks and need to find a good deer processor. I've had Syracuse in Keller doing my processing and it will be very difficult to replace them.

Thanks in advanced for recommendations.

What part of Houston are you in? I'm south of Houston in Clear Lake area, and have found a really good processor here in Santa Fe.

We will be in North Houston, about 6 miles South of Tomball. However, I'd be willing to drive an hour or so, if the processor was really good.

You are correct TCB they are hard to replace. They make some very good stuff.

Might want to drive to Fulshear & give Dozier's a try. They do processing & pecan smoking. Great stuff!

Where is Doreck's & Sons? Live in Clear Lake also and would love to find somebody close to home. Have used Vinciks in East Bernard, Kovasevics in Rosenberg and Jacksons in Crosby. All are good but Santa Fe sure would be closer to home.

Vinciks seems to be the most affordable. Have had them make summer sausage, deerstix, and link sausage. I like their seasoning. Only problem I have had was during the peak of the season they get real busy (as does everyone around Houston) and I think they screwed up my order. I try to bone out my deer and freeze the cut up meat and then take it to them for processing in February after the big rush. Only other complaint I have had is that the cubes of jalapeno cheese they put in their summer sausage are too big. Sometimes you will get a slice that is almost all cheese. Am going to try going to the grocery deli and getting a couple pounds in smaller cubes for my next batch. Also of note Vincik's has always allowed me to customize my order, allowing me to specify the percentages of deer and beef or pork in my sausage as I like to make them leaner than most processors recipes.

Have used Kovasevics in Rosenberg for summer sausage, deerstix and general processing of quartered Axis does. Has a good summer sausage recipe uses fresh jalapenos (upon request of course) but will not do cheese in the mix. Does a very good job of cutting and wrapping, will tenderize and maximize the steak cuts if desired.

Tried Jacksons Deer Processing in Crosby this year. Have used them for general processing (steaks and ground meat), deerstix, salami, and tamales. They offer several different varieties of sausage styles ie cajun, green onion, italian, bratwurst, etc. Haven't tried them so can't speak for the recipes. Salami recipes is good but was disappointed with their deestix. One of the few that will do deer tamales and reasonably affordable at $6/dozen.

Others in the Houston area that I know of but don't have experience with include Ladd's in Needville and Midway in Katy.

Doreck's is in Santa Fe on 646. if you go down 646 from 45, go past 517, past 1764, then you will come to a curve in the road. Doreck's is on the left just at the curve. There's a big bull on top of the building. They make darn good jalepeno deer sausage. I think you'll be happy with them. They do get backed up during the season, but well worth it.

Thanks for the info Skydual. Do you know if they process game year round? I like to debone my own deer and take the meat in to be processed in February after the rush. Also like to shoot an axis doe or two later in the spring also.

I'm not sure if they'll do it year round or not. Give them a call 409-925-6611 they're open fro, 8 to 6

Yeah I take my hogs and exotics to them year around.
