I have a brisket that I want to thaw by Saturday night. Anyone ever thaw one out in a yeti? Not sure it's the brightest idea but it crossed my simple mind.

Don't do it. It will just stay frozen. I tried that in my Coleman cooler which to me is just as good as the yeti and it was frozen solid more than 24 hours later. Either leave it on the counter or put it in the fridge and let it thaw out that way.

I usually just put it in the fridge 3-4 days before I need to cook ...

Lay it on a concrete floor and it will be thawed over night.

I leave on the counter overnight or at least a few hours in the evening, and then keep in the fridge til im ready for it.

Yeah you will still have a frozen brisket by Saturday, but you're doing a good job of getting the yeti prepped to hold ice for the weekend.
