I've seen it done a few times with feral hog ... that's pretty much what they do in Hawaii for a luau but wrap the hot in wetted palm leaves and I doubt they use mesquite LOL

Back when I was a kid our family was members of the Los Alamos Sportsman's Club. Every year we did something in conjunction with the muzzleloader shoot. That year we did a whole buffalo.
It took a backhoe to dig the hole. We filled it with wood and lit it up. Then put in more wood and burnt that into coals. We dug about half out and put in the wrapped meat, covered with the coals and then the dirt. That was Saturday.
Sunday we pulled it out. I cant describe how good it was. Over 30 years ago and I still remember it well.

We did it when I was growing up. That's where the word pit originated for BBQ.

We would dig a 4x3x5deep pit, built a fire in the bottom, dumped in 3 big bags of charcoal then suspended the hog on a metal rack hanging from re-bar, covered the hole with stainless sheet metal, built a fire on top of that and boiled shrimp and taters in a big kettle over that fire. 12 hours later......

It was a pain in butt, only reason i offered to help was for the experience and know how. I don't mind digging, I've always been proficient with a shovel. It was nice to cover it and forget about it instead of tending to the pit all day. Would i do it again? That was over 10 years ago, probly not unless i had a whole hog i didn't want to mess with but that hasn't happened yet

yep, covered in-ground pit cooking has a whole different texture and flavor profile. no way I could do that where I live as it's solid rock (literally)
