Leave as much fat on it as you can.

Brine it for 24 hours. Cook low and slow, I usually do 4-6 hours uncovered and then put it in a pan covered in foil to catch drippings and finish it either on the smoker or in the oven till falling off the bone. Shred it and mix the drippings back in.

It may not have the nostalgia of cooking whole hide on, but it works and its easy and you don't need a huge smoker to do it.

I do the same. I actually add in a cup of chicken broth and finish it in the oven, then shred it in the juices.
