I have a crossroad that coons and foxes frequent. I believe they like it because we drop carcasses and scraps there alot, and they probably use it to travel and mark territory. Would setting dog- proofs and flat sets work?

Absolutely! You won't catch many foxes in the DP's (at least I've never caught one), but you should do well with the 'coons. If you want the foxes, use a very ripe banana in a regular "live trap."
