I've got a 100 pounds of deboned Axis meat. I've got 50 pounds set aside to grind for baconburger and tamales. Looking for ideas and recipes. Let me have it.

Axis made the best pan sausage I've ever had. Can't go wrong with anything you do with it.

I felt like a hypocrite. I've suggested this dish for venison several times over the years especially for tough venison. I finally broke out my wok for the first time in years. I love the sheen on stir fried onions . Here it is plated. The original recipe calls for top sirloin. You can simply stir fry that then add the other ingredients. I used leftover pot roast tonight. You can stew up or even pressure cook tough venison. I introduced this recipe to a deer hunting friend and he took it everywhere he went.

I use venison for anything I'd normally use for beef. But, one of my favorite recipes is just good ol' crockpot stew. Put the meat in the crock-pot, cover with a couple cans of cream of mushroom soup, some Worcestershire, soy sauce, garlic, onions. Let it sit about 10 hours. When it's done it'l pull apart with a fork.

Had to use the google for parisa. Definitely gonna do this next time I go to camp. Got any good parisa recipes?

I crock potted my last nilgai roast just like a beef roast. I wish I had 10 more of those roasts. Very nice fine grained meat.

Made 12 pounds of bacon burger today. Then smothered a roast with onions. Beef broth. Red wine. Garlic. Steak seasoning. Stuff is as good as grass fed beef or Buffalo.

I use it to make a stew with potatoes and carrots. Also makes a great vegetable soup.
