I am not a fan of Snow Geese as food for myself. I tried a few and cannot get them to turn out nearly as good as Canada Geese and no where nearly as good as Specs.
If someone else wants the meat I will shoot them on a hunt but that is about the only way. Jerky is about the only way I have found I will eat them.
lf the saying "Liar, Liar your pants on fire" were true Mainstream news might be fun to watch

They taste like liver and blood if they're not prepared properly. Taste a little better than nutria if they are.

LOL, I was thinking about hiring a guide and going to chase them but if they are not worth eating, I think I will skip... I absolutely love Canadians, they are my favorite waterfowl but I don't want to shoot something that I won't eat. These are breast fillets that I pan seared and am getting ready to finish in the oven with a Cabernet wine sauce (I use the outback steakhouse lamb recipe)... Makes me hungry thinking about it...

Try this. Fillet off the breast meat. Soak it in milk overnight. Rinse. Cook all day in a crock pot, with chopped onion, salt, pepper, bell pepper, water, and red wine (or beef bullion). When done, serve the meat over rice. They are not the best tasting or easy to cook. I have found the crock pot works well. Otherwise, they tend to be dry, and have an off flavor.

The only way i will eat goose is if its smoked or turned into jerky.....
Most consider them rodents. You know flying rats or rats with wings.
But then i have heard if rats are cook properly they taste like chicken ! LOL

Jerky is the only way we eat them now. We have tried them a bunch of other ways but honestly the jerky is really good so that is what we do now. One of my friends had a bunch made into smoked sausage and it was pretty good, not as good as venison but close.
I'm with GK because I like salty old dudes.

Learning to cook well might take as much time and effort as learning to hunt them. I've had geese cooked well and it was amazing...I've also done a terrible job with it and it tasted terrible. The truth is most of the time when people say they don't like duck or geese it's because they cooked it wrong.
One simple thing you could do is make jerky out of it....it's a bit labor intensive but it's hard to screw up and normally comes out great. Also makes for a good in the blind treat.

It amazes when people say they like to eat ducks but snow geese are unpalatable. I get yelled at for bringing ducks home but the entirety of my family will munch all the geese we kill, which is quite a few. We have a bunch of recipes that are simple and tasty.

Best goose I've ever eaten was goose pastrami I got to sample this year in Wyoming. When he fed it to me I thought I was eating beef. No clue it was goose.
The geese were brined for 3 days in a pickling spice and pink salt. Then coated with half/half black pepper/coriander. Smoked for 3 hours at 250F.
Made the best Ruben sandwiches I'd ever eaten.
We made our pastrami out of Canadas, but my buddy that made it said his favorite was spring snows.
I find anything that tastes gamey, is usually better if cooked over a fire.
