Hey all - the wife & I are volunteering at the Sustainable Food Center in Austin to teach a beginner class on cooking wild duck & goose on February 12th. Its $40 to attend (All $$ goes towards the SFC) and we will be covering a few different processing techniques and about 4 to 5 recipes. There are a few spots still open if anyone is interested and I'd love any tips or suggestions as this will be me first time doing something like this!
