some one on here had a video of themselves making a TON of sausage, the video was great but I can not find it.... anyone have it?

We made over 500 pounds of sausage Sunday and didn't have timne to make any videos!!!

I don't have a video but here are some pictures...

First cut up all the meat and fat. This batch I added cured ham to since it was on sale for .68 lb and is what my grandmother used to make fresh kielbasa.



First Grind. The bag covering the end of the grinder prevents any splater going across the kitchen. So I don't have to clean all the cabinets.




I then add all the spices and mix all the ground meet in keeping it cool with crushed ice. Then I run it though the grinder one more time using a smaller grind plate. Note that I am putting the fianl ground meat in a large Ziploc bag to set in cooler for 24 hours to allow the spices to permeate all the meat evenly.


Then the next day stuff it in casings. I use the pre-tubed Natural Hog Casings 32-35mm from Walton's. They cost a bit more but makes loading them on the stufing tube a 1 minute job rather than 20 minutes.
