Ok, so after trapping 14 pigs in the 2 days over the last two weekends it is pretty apparent that I'm about to have a mess of pork over the rest of the season and need to figure out what to do with it. I've still got 4 deer tags to fill and can't send everything to the processor at once/process myself and the deer will take priority after this weekend. How does everyone store pork hams, shoulders, etc? The straps will be vacuum sealed but I don't have a sealer big enough for the hams/shoulders and don't want to grind anything right now. I've got an upright freezer and a chest freezer. Thoughts other than giving it away smile.

Edit: I bleed the meat out on ice for at least a week before it hits the processor/freezer.

Wrap tight in a plastic grocery bag then wrap in freezer paper or try a 2 1/2gal. Freezer ziploc if you can find them.
Freezer paper is great for odd sized cuts like hams. But you need something to trap out air on the surface of the meat and act as a "skin" thus the plastic bag.

Freezer paper, plastic Ziploc (or trash) bag, tape to seal.....I keep a ham or two....mostly grind everything but the ribs and back strap....those don't last long enough to worry about keeping.....also make our own sausage.....

We wrap the backstrap in serving size cuts in freezer paper and seal seams with freezer tape or wide masking tape. Do the same with hindquarters and shoulders. If shoulders are small wrap 2 in a pack and later cook in a crock pot with seasoning.
Took some boned out hindquarter to the processor and had them add 50% beef to it. The sausage was great but the price of the beef was not so nice.

I debone the hams trying to keep meat together in large piece for roasting and it helps with getting the meat in vacuum bags. I do the same with the shoulders and cut up into bite size pieces to make stew, carne, etc.
