Hey from Blue bell country, sometime this year, would like to see some new Carne recipes,
with ground venison. Got the plain Jane version in years past, but looking to try something
new! some one suggested adding some buffalo or antelope to recipe, but fresh out at the
moment.....
We like old fashsion cast iron dutch oven way, heavy gravy, beans, rice, homebrew tortillas....

Im confused is this about ice cream that killed people, sloppy joes, sos, or carne guisada?

Carne Guisada is Mexican Beef Stew. It won't really be as good with ground meat instead of stew meat. Guisada is characterized by large chunks of potatoes and meat, with onions and garlic, among others stewed into the liquid.

Using ground venison, you can make -

SOS
Pinto Bean, potato and ground venison stew
Spaghetti
Chili
Hamburgers
Beer Can Burgers
Taco Soup

...and the list goes on.

But for Guisada, you need meat chunks.

ding ding ding ... we have a winner!

I love carne guisada but I had never cooked it before. A friend's son was getting married to a southern belle in NC and we got invited to the wedding, little did I know we were invited to HELP prepare the rehearsal dinner Texas style ... for 350+ people eeks333 Wanting to make a lasting impression on their son't future in-laws, our friend had researched every restaurant in central Texas to find the best of the best recipes/seasonings for everything ... i.e. carne guisada, enchiladas, rice, beans, guacamole, margarittas, salsa, etc. She pre-mixed the carne guisada spices, bought all the meat, beans, rice, avocados, limes, tequila, tomatoes, peppers, etc. Likewise she determined the best tortillas were from Chuy's but they wouldn't give up their recipe (so she pre-ordered 1200-1500 to be ready the day we flew out, yes, we carried a large box of fresh tortillas as our carry on luggage). She and her husband rented a u-haul trailer to transport everything else... I digress, anyway, the morning of the rehearsal dinner, she put me in charge of all the preparation of the carne guisada trimming fat, chopping, browning, spices, etc. remember, for 350+ people) along with a half dozen roaster ovens that I was to use to cook it all. Everyone that came from Texas (about a dozen of us) were busy working our little (big!!!) piece of the rehearsal dinner as the mother & father of the groom had various activities throughout that day. AND this lady is the ultimate perfectionist (and OCD and ADD and ADHD) and we liked to never got her to leave so we could continue preparing!!! After the rehearsal, the masses started showing up, and they kept showing up. We had everything ready to go ... Everything came out perfect, except the margaritas weren't strong enough by the recipe (that was an easy fix!). To my amazement, the carne guisada was the best I have ever eaten, the mother of the groom told me it was even better than the restaurant where she got the recipe from (yeah, I tweaked it a bit up) ... I will have to see if she still has the recipe for the spice blend I used and post it up here.

oh yeah, I found out the father of the bride was a very wealthy retired doctor and he put a budget limit on the wedding reception of a half a million, which they overran... never in my life have I been to such an event! But they were all impressed with the Texas rehearsal dinner and stated that was their favorite part of all the activities!

never with potatoes here either ... I like to take a handful (or two) of corn chips, crunch them up in a bowl and cover with carne guisada ... its a meal!

I braise my guisada over a smoky grill then cook it for hours in a cast dutch oven with peppers, peppers, and peppers.

yep, 350 (there were actually a few more that showed up once they heard the Texan's were cooking dinner) ... I had 6 of those large roaster ovens full of carne guisada going. Took a while to trim all the silver skin & fat off of ~120 lbs of beef she hauled to NC from TX. I was trying to follow her instructions & directions exactly since she is such a perfectionist, but it was getting up close to time when the guests were going to start arriving and all of those roaster ovens were way too runny. I started making a big batch of roux including her seasoning mix to add to them to thicken ... worked like a charm!!

yes, after trimming, I seared the meat over a large industrial gas grill in the chef's kitchen before putting into the large roaster ovens that went for 7-8 hours.
