Took some Backstrap Cutlets and sliced in half to thin. Marinated in Worcester Sauce then separately Caramelized a Poblano Pepper and Onion then made a bed of Rice. Little Frog Balls with Carrots, Shoe Peg Corn. Braze the strap slightly in some Olive Oil coat slightly with a Wasabi and Soy Glaze and Walah...

Dang I just ate and that makes me hungry.

I was being sarcastic. I smoked an 8 inch long back strap today. Salt and pepper then wrapped in bacon to hold moisture in and it came out awesome. Might not fry back strap again for a while.

Never tried smoking it, that sounds good. I knew you were just joking, just playing along.

I was very surprised out how juicy it came out. I cooked it until internal temp of 140 then took out of smoker wrapped in foil and a towel and let it sit for 30 min. Absolutely awesome.

I typically grill back straps but for Christmas I smoked some whole. I applied my rub then vacuum sealed for 24 hours. I am to lazy to weave bacon so just draped over the top then put on the smoker at about 225 for 2 hours. At that point I loosely wrapped in foil and put it back on for an hour. Rested it for about 15 minutes then sliced. It was so juicy and tasty. I now plan to do many more this way and even plan on doing one at work for my crew along with my normal chicken quarters and sausage.
