Challenged by a couple pregnant women, I was forced to cook a possum. Click over on my silly blog to read about why I did it and some pictures. I found skinning it to be pretty disgusting, but was amazed about how well it cooked up. If a pig bred a chicken, then that's where I'd rank a slicktail. Here's how I I cooked it.

Ingredients

Brine

1 cup of Kosher Salt
1 cup of brown sugar
1 tablespoon ground all spice
1 tablespoon ground nutmeg
1 tablespoon whole cloves
Possum

1 grinning possum, quartered
4 sweet potatoes sliced in 2 inch chunks
4 apples cored
2 cups of dry white wine
2 cups of water
Flour
Dried Thyme
1 TBS cinnamon
1 TBS all spice
1 TBS grated nutmeg
Salt
Black Pepper
Method

Simmer brine to dissolve salt and sugar, allow to cool to room temperature. Add the possum and brine for 24 hours. If necessary, add a plate to keep the meat fully submerged.
Remove from brine, rinse and pat dry.
Combine the flour, salt, pepper and thyme. Coat the possum with flour mix. Place in a roasting pan at 350 degrees, uncovered for an hour and add the wine and water.
At the end of the hour, add the sweet potatoes. If necessary, add more wine and water. Cover and cook another 45 minutes.
Add the cored apples, and the rest of the spices and return and cook covered for another hour.

Similar to pork in all honesty.. along with armadillo. Its meat.. really no worse than any other factory meat we get... just that the appearance of a possum isn't acceptable for humans to find appealing.... so there for not thought as food... in real life just about any animal is edible in some way

And so much of our food is influenced by "common knowledge" rather than actually tasting it ourselves.

The key to eating possum is to have someone watch out for cars while you enjoy.

I saw a show where a guy ate raccoon, possum, jack rabbit, and armadillo. He said all were "okay" but the best was armadillo.

opossum and armadillo I look at as survival food, easy to catch or kill if food is needed. I have ate opossum but never armadillo but cooked right opossum is not bad. Do not recommend chicken frying though.

Dad cooked a 'dillo once, dog was a no-go.

How many people does it take to eat a possum in Louisiana? Two.....one to eat and one to watch for traffic.

It all has to do with culture, traditions, what was fed to us growing up, etc. Like said meat is meat.

I bet if any of us were to watch a hot dog or bologna being made we would never eat it again and would gladly take the possum dish you just made instead. I know I would.

Your absolutely right. I laugh and joke about eating possum and the like, but the truth is that I have grown up eating all kinds of critters including possum, and possum ain't bad. My favorite game meat is squirrel and when I tell some folks that, they look at me like I'm from Mars.

yep, possum isn't bad, neither is coon. Armadillo and rattle snake in the mix too. Squirrel either German fried or with dumplings ...

My grandpa grew up during the depression. They trapped anything with a skin to sell and help the family. I remember hearing stories of camping out with his brothers while running their trap lines and eating boiled raccoon and opossum. Desperate times.

yep, my mom & dad grew up during the depression and had to live off the land. We never had coon or possum served in my house while growing up but some of the really poor people did and that's where I ate a few times but they were always willing to share what little they did have.

How do you even start to clean an Armadillo?

I remember when the city of New Orleans got John Folse (popular cook) to come up with recipes for Nutria to try and get the locals to pick up a taste for them and help control the population and reduce levee damage. Didn't quite catch on...

I've eaten Raccoon, not bad, but I just can't get past the tail of a Possum or Nutria.
