Get a big yellow onion. Chop the top and root ends off to make a nice flat spot to stand it on. Don't peel it. Now slice it in half and salt and pepper it. Put both halves on the grill standing on the root or top flats you cut earlier. Drizzle with olive oil and place a large pat of real butter on top. Just let it cook until the skin burns off and the center of the onion softens. Really good with steak.

Some good ideas, I'd second squash/asparagus/zucchini.. Slice squash & zucchini long ways & season w/ Lawrys or your favorite spices.. Yum..

Several ways to go. If you are camping out then things might need to be kept simple. Grits or plain old corn meal with a jigger of tobacco sauce will work. It might sound insane but couscous, you boil water pour it on the couscous and cover- set aside and wait 5 minutes and that's it. You can get the stuff in various flavors but the mushroom goes pretty good with steak. Plain old boiled rice isn't too bad with beef but you need a strainer. That couscous, the pot just boiled the water so you don't have to clean that and if the bowl used to make the stuff- if it is enamel- just rinse it out- simple, simple, simple.

No strainer needed to fix rice, 2 cups water, one cup rice, big pinch of salt, add chicken bullion for fancy rice. Cook at slow boil for 20 minutes, rice should absorb all the water.

I like cooking whole mushrooms in butter, Worcestershire and wine with our ribeyes at the lease. Only takes about 10 mins. That meal goes great with a brown rice to soak up all the steak and mushroom juices to food

I usually take a whole sweet onion, cut the bottom off and cut cross-ways multiple times (like slices of pizza or outback awesome blossom), set in small piece of aluminum foil slightly wrapped (like a bowl), open up the crisscross cuts and add spices (black pepper, garlic powder, chili powder, sea salt) and a large pat (1-2 TBS) of butter, slide it on the grill next to the steaks. I usually do in my smoker for an hour or so with lower heat to get all that smokey goodness. up

corn on the cob ... in shucks, soak in water for 20-30 minutes, put on the grill with the steaks for 12-13 minutes, rotate 1/4 turn, 12-13 minutes, repeat on all 4 sides. Can do similar by removing shucks, wrap in aluminum foil with a little butter, salt & pepper (can add onion and/or garlic powder), 12-13 minutes rotate 1/4 turn, repeat all 4 sides.

veggie k-bobs... mushroom caps, zucchini, yellow squash, onion slices, cherry tomatoes.

rice-a-ronni (the San Francisco treat) works pretty well too and very easy prep, or Zatarains Jambalaya mix with a few link sausage chopped up...

Rice with a spiced up olive oil and vinegar mix. Mix the vinaigrette up before you leave, store it in an empty plastic soda pop bottle. We add a tablespoon of this to an 8oz mix of oil and vinegar. I like more spice so I sprinkle more on after I add the vinaigrette.


Try this first by using teaspoons instead of tablespoons, and adjust as you get to your own favorite version.
