I add some fat to my meat usually (burger and sausages). Ratio varies according to what the end product is. I get trimmings from a local supermarket that cuts their own meat. Use pork for pork and beef for deer. Usually can get the trimmings for nothing or a low price (last time was 20 cents a pound).
