HaHa! Yes it is! OLD Hobart brand grinder that is solid cast and probably weighs 200lbs. lol! That sucker can grind some meat though!!!

Good deal! Season before last I used regular cheddar cheese when I made cheese and jalepeno summer sausage. Do you use that high temp stuff or regular?

I add some fat to my meat usually (burger and sausages). Ratio varies according to what the end product is.
I get trimmings from a local supermarket that cuts their own meat. Use pork for pork and beef for deer. Usually can get the trimmings for nothing or a low price (last time was 20 cents a pound).

yes, about 10% in the links and pan sausage. Any meat market will have beef fat scraps. Got mine at HEB.
Summer sausage is just 50/50 pork/deer.
