You've gotta try the venison bacon burger off the allrecipes.com website. My wife made them last night. Minced bacon mixed in with the ground venison is great. Look it up, try it, you'll be pleased!!!!

yep, we usually make some when processing using venison & bacon 80/20 or 85/15 mix. When we are ready to cook as burgers, I will finely chop a onion and mix in right before cooking.

I often grind bacon, cheese and jalapeno in my ground venison meat meant for burgers.

I like to smoke bacon so it is too smokey for using as frying bacon, then grinding it with venison. the resulting bacon burger can be cooked inside and taste like it was cooked over coals.

For venison hamburger steak grind your favorite grind. Make two very thin patties and sprinkle some finely chopped onion and a lite sprinkle of garlic powder between them. Then pinch the outside edges together. Whip up some brown gravy and mashed potaoes.

I will have to give this a try. When I process my deer I mix 30% brisket in my ground meat. This makes awesom burgers as well.
