Recently got on a lease south of Goldthwaite. Looking to see if there are any processors in the area. I looked around a bit but did not see any.

Cool. We're neighbors at home and at the lease. We live just north of the woodlands and hunt about 10 miles south of Goldthwaite . Not sure of a processor but if you call the general store they will know. Good luck

There's a processor in town but I wasn't impressed. Summer sausage was very sub par and the smoked sausage was hit or miss no consistency when it came to taste. Cuts were also a ? Mark. My tendered ham steaks were very poorly done.

My dad has used all of them from goldthwaite to meridian and none of them have been really all that great mostly due to not getting all your meat back and when you have done and been around a processing shop like we both have you know what you should get back .The thing about most processing shops these days is you dont get your meat back it is all mixed up and you may get two or three different peoples deer meat .

I've used Hibler's in San Saba which is about 22 miles south of Goldthwaite probably less for you and I like their processing and packaging.

We took 5 to San Saba and 8 to Mills County Locker so far this year. Since Langford sold MCL it just hasn't been the same. I honestly question how much meat we're getting back and IMO the sausage is average at best. I do like the mix on their sausage as they use 80/20 pork and the product comes out extremely lean. But when you start factoring in gas to take deer to Hamilton (which is decent) or elsewhere, it starts getting $$$. I think there's one north of Comanche, maybe Burton's? Used them years ago and the summer sausage and link sausage was spectacular, but even back then they were through the roof on $.

Mills cty locker plant is the only one in Goldthwaite. We don't use them any more. Sausage doesn't get enough fat put in and steaks didn't get trimmed well. Hamilton and Meridian both have good locker plants. We typically bring our quarters back to Syracuse (now Cinnamon Creek) here in North Fort Worth.

I use Whaley's Processing in Hamilton and have for years. Their jerky is phenomenal and the summer sausage is hard to beat as well. BJ Whaley is the owner and is usually on site to address any customer concerns. Good guy too.
