I am working thru my first ram kill and due to it being a younger animal, so far the meat aint that bad.
Took the two front shoulders and one ham to the ladies at work for tamales.
Stripped out the backstrap, wrapped one in bacon and cut the other up for chili tonight. Chili wasnt bad at all.
Took the carcass and seasoned (rib and rib flap meat, neck meat) and salt/pepper/garlic/cumin/chili powder) it and stuck it in the oven overnight for barbacoa.

Still have one ham left. What should I do with it? Thinking about cajun butter injection and a cajun rub and smoking it.

My wife ate it, so that's a pretty good sign. I'll eat damn near anything.
Barbacoa and eggs this morning was good.

Picked up 5 doz tamales today that a lady at work made me. Hope they tasty!
