Had Alligator ribs once. They were pretty good and really meaty.

Don't have any recipes.
The only way I have had it is cubed and fried with Cajun spices, was pretty good stuff.

Thanks guys. I saw this recipe in Field and Stream, Alligator Sauce Piquante.

I've got it on the stove right now. It smells excellent. I'll let y'all know how it came out.
