Last year I tried a couple of new ways. I diced up several breast and sautéed them with chorizo and made stuffed jalapeños. I also lightly battered and fried several. Then tossed in buffalo wing sauce. They were both pretty darn good.

Last year I tried a couple of new ways. I diced up several breast and sautéed them with chorizo and made stuffed jalapeños. I also lightly battered and fried several. Then tossed in buffalo wing sauce. They were both pretty darn good. Both of these recipes sound awesome!

good on the grill with bacon, also make a good soup or gumbo. Never thought of using dove in gumbo. Have to let the wife know about this. Good dinner on a cold December evening. Thanks for the idea.

Smoked with pecan at 250 for about 30 to 45 mins with bacon, peppers and cheese.

This is awesome!! [Hot Fried Birds (serves 4)12 whole doves, plucked and gutted (I have been assured, though cannot confirm, that plucking a dove is not difficult)1 cup buttermilkkosher salt and freshly ground black pepper2 cups all-purpose flouroil or lard, for frying3 tablespoons unsalted butter4 tablespoons honey4 garlic cloves, finely chopped3 tablespoons hot sauce4 thinly sliced jalapeños1/4 cup fresh herb leaves, such as parsley or marjoramHalve the birds by cutting down one side of the breastbone and through the ribs with a sharp, heavy knife. Repeat on the opposite side, effectively removing the breastbone. Soak the halves in buttermilk for 4 to 12 hours in the refrigerator.Remove the birds from the buttermilk, season well with salt and pepper, and dredge in flour. Shake off the excess flour and refrigerate them for at least half an hour.Heat 4 inches of oil to 375 degrees in a fryer or large pot.Melt the butter, then combine it with the honey, garlic, and hot sauce in a large bowl.Fry the birds in batches until golden brown and crisp, 3 or 4 minutes. Drain well on paper towels.Toss the fried birds with the melted-butter mixture, add the jalapeños and herbs, and transfer to a plate. Serve immediately. I just use the breasts...delicious!! Made this yesterday except i used breasted dove. Half of them I cut the meat off the bone to make dove nuggets. Those were the best. This is the best dove recipe I've ever tried! Made 30 birds, just upped the recipe and used way more garlic. Also used garlic pepper instead of fresh ground.

Once you try the Hot Fried Dove you won't cook them any other way.

Stuffed with jalapeño and onion, then wrapped in bacon. Grill at 350. Indirect heat for 30-35 min. ENJOY! At least my 10 year old son wouldn't stop eating them.

I tried the Hot Wing Style with Frank's Hot Sauce last night. Looked great but not really my thing.

Try Sriracha Dove for the hotter types...makes boneless chicken wings seem redundant. Stir fry the dove breast in salt pepper and garlic to taste, you can dredge in lite flour for a light breading. Add 1 cup sriracha to 1/4 cup of water, and let simmer for 5 minutes. put the bresats in a large bowl and pour sauce over and toss together. The taste of dove goes very well spicy. Variations are add Cilantro and lime to the Sriracha and/or a bit of Tequila and simmer the same. Garlic sauce is also good. Mix together 1 TBSP cornstarch 1 cup water, 1 TSP Garlic powder and some crushed rep pepper flakes. Place on Med heat and watch closely as it will thicken fast. You can use this base for any sauce that you want to thicken...I make chinese sauces with it all the time.

So I'm wonderin how y'all cook an server y'all's dove? The way we did ours was we got the dove and fried it in a deep fryer, then we took bacon and wrapped it in bacon. In my opinion you can't beat that... Except if you wrap that in elk steak which I hold y'all will try it's really great! How do y'all serve y'all's? Dove Enchiladas served with a shot of Patron is the Best Shhhhhhhhhhh don't tell anyone
