I use to cook dove with the breast bone and meat intact but now I pull the breast meat right off the bone while cleaning my birds.

I filet the breast also. It makes for an even cook and I seem to find all the hidden pellets that way also.

Freeze mine with breast on and filet when thawed and ready to marinade.

I didn't know people left the meat on the bone...that's funny Thats the way my dad use to do it and then my mom would bake them. Still tastes good but much easier to eat off the bone.

I pull wings back rub chest with thumbs till skin eels off then grab sternum with my thumb and rip the breast off.

leave on bone and freeze...then I'll either do the slit with jalepeno and bacon wrap on the bone OR peel breast off and make dove dumplings which are amazing.

I've done it both ways, one thing is for sure though, at some point they are getting separated I pluck breast, drive thumb under breast and pull forward, cut wing bone with shears/heavy azz sissors. remove skin.
If at first you dont succeed, then skydiving is not for you..
