No, not that kind. The good kind! Went over to my brother's Sunday and made 30# of deer and hog sausage.

Deboned 15 lbs of deer, 7.5 lbs of corn thieving hog, and 7.5 lbs of domestic hog shoulder. Also had a bag with some brisket trimmings.


Grindin'


Mixed up.


Stuffed.


In the dehydrator for a while to dry the casings.


My brother got his electric smoker working. Worked great so we could work on stuffing more without worrying about it. Dialed in at 180.


Off the smoker, mixture of hickory and pecan.



Turned out really good. That grinder beats the living #@%& out that hand operated one I have.

Only took 13 hours and an 18 pack... coffee

Thank ya, it took less than an hour to get the casings dried. The mix wasn't very "soupy" so they weren't very wet to start with.

Sorry, no I was just talkin' about the ingredients. I did debone the hog quarters (feral was frozen whole) while my brother was cleaning up the deer meat.

Awesome, I love sausage making. I just do it in cooler weather because my wife makes us do it in the garage.
It is hard to tell from your pictures, but, I alternate the meat as I grind it. One piece of venison, one piece of pork...
It saves all of that hand mixing after it is ground.

What did you use for spices? I've been trying to perfect my soosage recipe for a while and still don't have it dialed in. You willing to share your ingredients and proportions?
