So I'm wonderin how y'all cook an server y'all's dove?
The way we did ours was we got the dove and fried it in a deep fryer, then we took bacon and wrapped it in bacon. In my opinion you can't beat that... Except if you wrap that in elk steak which I hold y'all will try it's really great!
How do y'all serve y'all's?

So you fried the dove then wrapped it in raw bacon and ate it? Or refry the birds in bacon

I always wrap the bird with bacon and cook both at same time on grill. My cooked bacon doesnt bend very well.

I like the standard jalapeno/cheese/bacon-wrapped on the grill. Once a year I'll do a dove gumbo with about 60 dove in it, maybe some duck or sausage, that's really good.

60 dove! it would take me about 6 or more seasons to get that many to cook laugh

I remove the meat from the bone, cut it in 2 or three strips. Then I sautee meat, onions and jalapeno (deseeded) in butter (salt pepper and garlic) and serve as fajitas. They're GREAT !!!!

Only takes 4 days for 60. There's a dove lease behind my place and he harvests his milo in a very sloppy fashion. He plants sunflowers, cuts rows, the whole 9 yards. He's tried to get me onto his dove lease, but why would I? I already get full advantage of it from my side of the fence.

This is the only way I eat them! Wrapped in bacon, with a 1/4 Jalapeno sliver, and then covered with Zesty Italian Dressing and Worcestershire sauce. Cooked till the marinade is only 1/8th" deep. Its making me hungry thinking about it.

Slice the breast off, batter it with flour, fry it in a skillet and sprinkle with creole. Rest get sliced to insert a slice of jalepeno, wrapped in bacon and grilled. food

This is awesome!! [Hot Fried Birds (serves 4)12 whole doves, plucked and gutted (I have been assured, though cannot confirm, that plucking a dove is not difficult)1 cup buttermilkkosher salt and freshly ground black pepper2 cups all-purpose flouroil or lard, for frying3 tablespoons unsalted butter4 tablespoons honey4 garlic cloves, finely chopped3 tablespoons hot sauce4 thinly sliced jalapeņos1/4 cup fresh herb leaves, such as parsley or marjoramHalve the birds by cutting down one side of the breastbone and through the ribs with a sharp, heavy knife. Repeat on the opposite side, effectively removing the breastbone. Soak the halves in buttermilk for 4 to 12 hours in the refrigerator.Remove the birds from the buttermilk, season well with salt and pepper, and dredge in flour. Shake off the excess flour and refrigerate them for at least half an hour.Heat 4 inches of oil to 375 degrees in a fryer or large pot.Melt the butter, then combine it with the honey, garlic, and hot sauce in a large bowl.Fry the birds in batches until golden brown and crisp, 3 or 4 minutes. Drain well on paper towels.Toss the fried birds with the melted-butter mixture, add the jalapeņos and herbs, and transfer to a plate. Serve immediately. I just use the breasts...delicious!!

That is a new favorite of ours, for sure. That recipe is from Jesse Griffiths' cookbook Afield, just for copyright purposes...

Funny you say it in Spanish, I remember hunting at my grandpa's place and the neighbors, who happened to speak Spanish would tell us we shouldn't be shooting the birds of peace.

I made some into jerky last year. Very interesting texture. I dried each breast whole
