slather a light coat of mustard on both sides and dip into Louisiana brand Seasoned Fish Fry and you will have mastered frying fresh trout! tried and true brother! cheers

It's great deep fried but there are other ways. You can also pan fry it or grill it.

pan seared ... lightly spray fillet with Pam, lightly coat with Fiesta Cajun seasoning (or Tony's), spray skillet over medium heat for 3-5 minutes per side (depending on thickness), flip another 3-5 minutes ... done

Cooked them pretty much every way a person can, but my favorite is still frying them up. Skinless/boneless fillets with red meat removed (always), dipped in an egg/milk wash, rolled in Andy's, and fried crispy in hot Crisco vegetable oil. I have still never tried coating fish in mustard, or briskets in mustard, just seems WRONG to me. grin

Coating fish in mustard is the only way I fry fish anymore. My wife who hates fried fish will eat the heck outta some fried sandbass cooked like that. And, it doesn't taste like mustard when it is done, the mustard just gives it a good clean taste.

Try dejon mustard. You'll get a hint of a really good taste from that. Mustard is easier than the egg wash. Let them set awhile after you bread them. The breading will stick better. Less meal in the pot.

Any of these recipes are dynamite for specks. But Rick oShay has it down. Clean and easy. One of the best ocean fish out there.

Take however many fillets you want to cook, clean them off real well, and pat them dry. Put them in a glass baking dish and then with the skin side up (or the side the skin used to be on) rub filets with olive oil, then sprinkle a little garlic salt and pepper, and then quite a bit of creole seasoning. Flip the filets over and repeat the process. Put a couple thin pads of butter on them and broil them for 8-10 minutes or until they are flaky. I used to only fry trout but now this is the only way we eat them. It is incredibly easy and works great with almost any fish. After the fish is done put a little pico on top of it when serving. We have also used this same recipe with snapper and redfish on the half shell.

mustard and Louisiana hot sauce mixed to a pink color. dip fish in to coat then into corn meal. fry until golden brown

Salt and pepper fillets, egg wash and panko fry till golden brown. Makes for some dang tasty fish. Never should have made it for my wife, now she doesn't want anything with cornmeal anymore and the egg wash and panko gets labor intensive sometimes!

My favorite is called Hot and Crunchy Trout with Mango Salsa Aioli.

Hands down the BEST way to fix Trout.

You probably already cooked them but here is a recipe to try in the future:

filet them. coat them in buttermilk ranch, put in a ziplock bag and let them sit overnight.
next day: crush up some durkee's fried onions and put on a plate. take trout out of bag and lightly shake off any excess ranch. then dredge the filets in the fried onions to coat both sides evenly. lay all the coated filets on a broiler pan and place in the oven and bake until the onions have turned crispy to your liking.
