Been doing that for a few years, it's hands down my favorite way to eat backstrap.

You can also take cream cheese and cut up jalapeņos, mix them together and put it inside the backstrap then wrap in bacon. Then cook it on the BBQ. It's a hit with everyone who tries it.

Yep, look like up you butterflied, then added your spices to rest a bit. Liked that you tenderized the meat, maybe with a jaccard? Hot heat, and quick cook, yummy!

All that weaving of the bacon looks like way too much work. Just rolling it over backstrap gets messy, greasy, and hard to work with after about 5 minutes.

LOL ... I grew up with my dad referring to summer sausage as donkey d!ck ... never really questioned it until one day when I was about 12 years old in the local grocery store with my mom as we passed by some summer sausage and I said (evidently quite loudly) "Hey, can we get some Donkey D!ck and a large back of Ruffles???" ... my ear was never the same ... dad had to explain to her when we got home. He about died laughing at the story though.
