I love ceviche. I especially love it with fresh caught speckled trout. I have made this recipe with speckled trout, redfish, black drum, flounder, sheepshead, and mangrove snapper. Ceviche is a raw preparation of fish, with the acid in the citrus juice “cooking” the fish, by denaturing the proteins. I know some of you guys may be a bit squeamish about eating uncooked fish, however, this is a must try!

Man! I too love ceviche, and that looks fantastic!!! My wife and I went to Costa Rica a couple of years ago and we made fresh ceviche from fish we caught that day and stuff we pulled out of the yard. That's what got me hooked on it. Thanks for the recipe.

I put mine on the counter in a Ziploc bag overnight with lime juice before I mix in the couther ingredients. Yours looks great.

I refrigerate overnight, then pour off the "fishy" juice, and replace it with fresh citrus.

Man that looks good. When we were in Tahiti we ate some fresh yellow fin tuna ceviche and he put fresh coconut milk in with it and it was amazing
