Sounds great food

The only liquids added for cooking are soy sauce, whostershire sauce and Louisiana hot sauce ?

Try that in a pressure cooker. Same results in 30-45 minutes.

How does the skin come out texture wise though?

We sometimes do the HEB Fajita Chicken thighs in the croc pot and they come out awesome, there isn't any skin on them.

Sounds good. I do about the same with feral pork, shredded it makes great tacos.

chicken skin doesn't crisp up in a crockpot, or, I may have had too much liquid

He doesn't use much liquid, you might get away with it.
