Cooked burgers for my family tonight. After I got them fed I experimented with a little duck burger. Hamburger was 90% lean, and I mixed in 1 duck breast (i.,e half a duck). Spiced with steak spice and minced onion, dang good I must say!! It was about 50/50 duck/hamburger, next time I’ll go about 75% duck and see how that works...

What I like about duck burger is you don't have to cook well done, whereas if you mix with pork, like duck sausage, it has to be well done.

I had 200 lbs of goose burger made a few weeks back. We mix 50/50 with in trimmed beef briskets. Grind all together and package. It's really good!

Picking up 225 lbs of goose sausage this week.

I grind up duck quite often. Straight duck mixed with a little pork fat- keeping it about 90-95% lean. Looks different than deer burger, but tastes good once cooked. Typically use it in spaghetti or taco's. Haven't tried actual burgers with it.

Also works great for those with a spouse/kids that don't like duck. Fools em good.

thanks brazos but its kind of a drive. i'd take the trip for fun but school and work got me. ship it in a yeti cooler and ill send the cooler back.....eventually grin

there used to be a pellet detector that you could run over wild game to indicate if there was shot in the meat. havent seen in a while. how do you know if you got all the pellets out of the meat? one steel pellet will ruin a good grinder. nice lookin burger. if you could run through coarse plate on grinder with burger texture may be even better than just chopping meat with cleaver

After experimenting on myself, made duck burgers for everyone this past Sunday. 1 pound of 90% lean hamburger, and 2 gadwalls made 4 good size burgers. I tried duck burgers long time ago, seems I had problem with the burger not staying together, maybe I did too much duck or did not mix good, but these burgers held together great, and everyone liked them. Could not really even taste the duck, I may try 3 gaddies to a pound next time.
