I know she found the idea on Pinterest, but I swear she didn't use a recipe...she cored the apples, then used pre-made pie crusts brushed with butter and cinnamon as a "bottom" for the cored apples. She then baked them for 15 mins on 350 or until the bottoms were somewhat crispy. Be sure the pie crusts are on top, so they'll bake properly. You can flip them over once you're ready to fill with the diced apples.
She then did a large dice on the apples, pan seared them in butter, cinnamon and sugar until slightly browned, and filled them in the apple cores (once they cooled).
After that, cut your pie topping strips, cross them, brush with butter and dust with cinnamon, then bake for 15-20 mins or until the top is golden brown.
You can make a caramel sauce if you wish, which went really well with it! Sugar, butter, heavy cream. I highly suggest getting an apple corer, as they're not easy to do with a knife!
