Cool. I don't even fielddress them unless I'm cooking them whole. I just skin cut the back straps out and quarter them. Unless its a big hog the rids are pretty thin so I just leave them closed. You can trim the outside for sausge if you want.
Sometimes it's hard being me! But somebody has to do it.

Good technique. The only thing I do different is to use a MUCH smaller fixed blade knife. Good grief he was wielding a big blade! He did a fine job with such a big knife, but if you use a 2 1/2" or 3" fixed blade it makes the job so much easier in my opinion.

I will field dress in colder weather. Pack full of ice and call a friend who can easily distribute the meat to someone in need and meet up for delivery. If I'm on extend stay or something they are quartered, packed on ice and then distributed. It is work no doubt. But not too much work if you are the poor, unemployed/under employed family who gets the meat. I've done 16 since September. Hope to some more soon.

Not a bad vid until he wasted all the innards... I love backstraps as much as the next guy, but the liver is the best part of any beast with the kidneys and heart not far behind.
