Any ideas as to how to best cook a hind quarter from a feral hog. I've eaten it a dozen times but it was always cooked by someone else. Every time I cook it, seems to be dryer that it should be. I don't like to inject the meat with anything.

Smoke it! I've done it 100 times. Here's what I do:

I know you said you don't like to inject but trust me on this. Get a bottle or jar of the creol butter or garlic butter and inject the ham with that. Brand doesn't matter. You won't even taste it but it will help keep it moist. Do this the night before the smoke and put in the fridge over night.

The next day apply your favorite rub and smoke at 225 degrees. Every 45 minutes I will spray it with an apply juice, canola oil, and Captain Morgans mixture. Once the internal meat temp gets to 165 degrees, wrap in a minimum of two layers of foil and put it back on the smoker. Or, put the foil wrapped ham in a pan and cook it in the oven at 225 degrees. Take it out when the meat temp reaches 202 degrees. I try to put mine in the oven since the smoker has add the smoke flavor it is going to by that point.

Once it comes out of the oven or smoker, let it rest for a miminum of 30 minutes before you open the foil. I usually let mine sit in a cooler for an hour. When you do open the foil make sure to retain all of the juice that is sitting in the bottom. After you open the foil, start pulling the meat off the bone with your hands (gloves are a necessity here) and shredding it with your fingers. I actually like to chop mine with a meat cleaver. Pour the remaining juices from inside the foil over the top of the shredded meat. Make sure to mix it in so all of the meat is able to absorb the juices.

Cook it slow in the over on low heat for a whole day wrapped in foil....

I always use a dutch oven and use Ree Drummond's recipe - http://www.foodnetwork.com/recipes/ree-drummond/spicy-pop-pulled-pork-recipe/index.html. The only change I make is I use the smaller can of chipotle peppers and I use one less tablespoon of brown sugar. You can't go wrong with this recipe, I make it about once a month.

Get the large oven bags and stick the quarter in the cooking bag. Put ALOT of butter, whatever kind of seasoning you like, some jalepenos and tie the bag. poke a hole in the top of the bag. Throw it on the smoker at 250# untill its tender. Falls of the bone completely and its absolutely delicious. I've tryed cooking whole hog quarters alot of ways and this is the best method i have found. The second best method ive found is boiling it in crawfish boil then throwing it on the pit, low and slow. My favorite is the backstraps butterflied out and stuffed with creme cheese-jalepenos wrapped in bacon... clap

WBYHunter - I printed out the recipe you referenced. Do you really use the Dr. Pepper? In a way this sounds pretty good and then again, doesn't it make a mess of the pan when it boils down? I'm thinking I'll try several of these, have 4 rear quarters right now so hopefully one of them will come out a favorite.

I have done very similar to the Dr. Pepper method mentioned but I have used root beer and didn't use near as much brown sugar as the root beer is pretty sweet. I do this in a crock pot for very slow cooking, let cool a bit before shredding into great pulled pork.

Yeah, I use Dr Pepper. Don't use anything diet though, it'll taste horrible.

It doesn't make a mess of the pot I use, cleans up pretty easy. You could always use a crock pot instead of a dutch oven if you want. Same concept and should clean up easier.

Who ever invented the crock pot bag was a true genius!!! virtually zero clean-up time.
