Thanks! I baked it at 350 for an hour, then 400 for 20 minutes, and for some reason it still wasn't done...so I put it in there at 375 for another 20 minutes and it was good to go.

Looks great.
To roasters everywhere, get a digital instant read thermometer. The kind with a probe and wire. It takes all the guess work out of the cook time. It takes whatever it takes to reach temperature. I have the Kitchenaid version and LOVE it.

TxReflex, for sure one of the best kitchen tools I have. Lately my friends think I'm some sort of roasting master. What they don't know is that it's two small secret: 1) if at all possible bring the roast up to room temeperature before roasting or at least close to. 2) my Kitchenaid instant read thermometer. I mean I generally know about how long something takes so I can plan other dishes around it. But the precise second is irrelevant to me because I just wait for that magic little beep to go off and I know I'm good to go.
Before I forget, from my experience I set the alarm anywhere from 5-7 degrees before the internal doneness temperature. On poultry more like 7 and beef more like 5. The internal temp will rise during the resting period.
