Alright Guys,

Im thawing out all my duck breast from this past season to make some jerky. Ive done it the last two seasons and have really enjoyed it. However, Im looking for a new recipe to try out on some of it. So lets see some good recipes, post pics or whatever.

Guys, this guy needs help....I have had his jerky and it is barf ......PLEASE give this dude some advice

Ate this jerky for the first time about 5 years ago on a hunt in Missouri. Absolutely delicious. Now every goose that my buddy and I shoot is processed into jerky.

2 cups teriyaki sauce/marinade (thicker brands work better)
2 TBSP Tabasco Sauce
2 TBSP Liquid Smoke
2 TBSP Black Pepper
2 TBSP Garlic Powder
1 TBSP Meat Tenderizer
1 TBSP Mrs. Dash Seasoning Salt
1 TBSP Red Pepper Flakes
4 lbs of Goose/duck meat, thinly sliced (about a 1/4" or so - if you cut across the grain the resulting jerky is easier to chew)

Mix everything together, making sure the meat is completely covered. Cover and marinate in the fridge overnight. Put in your dehydrator or oven until the meat is dry, but not crispy. Just follow the instructions on your dehydrator (I don't know what setting to use on the oven). Enjoy!

www.red creek marinade.com, from Amarillo...just did all my duck and goose w/this and it turned out great! I brined all the meat for a couple of days first.

In meat, same with steak etc, the muscles run in a certain direction, making a visible lines. Cut across it and it makes the meat more tender.

ok, any one that has made a ( good tasting ) duck jerky really needs to be suppling samples

kind of like no pictures, useless with out samples.

because i find it hard to believe, but am willing to try

For the past several seasons we've skipped the jerky route and made snack sticks or "Slim Jims" from our ducks.

There is a company (A. C. Legg) that makes seasoning for commercial processors but will sell thru distributors in quantities correctly packaged for 10 or 25 pound batches of sausage. We order thru Allied Kenco in Houston.

The spice blend we use is Leggs Old Plantation Seasonings #116. Our formula is about 18 pounds of duck, 5 pounds of beef fat and a couple pounds of jalapeņo. Grind it all up, add the seasoning, some cure (AKA pink salt), stuff into 21mm casings and smoke to 160 degrees.

Warning this stuff has been known to cause addiction.

I made it once, it was pretty good. I did a batch of ringer, and a batch of puddle duck, just to see if you could tell a difference...They both were good!!
