That's two things I simply won't buy except for the exceptions. One head of cabbage wil make enough slaw to feed 16 people. I can make it anyway you like it. Same with potato salad. Most store bought has no eggs and half cooked potatoes. I like onions in both but can do without them.

Store bought or homemade for you?

Coleslaw is homemade, potato salad - who ever brings it. I don't make it very often.

Southern Coleslaw: shredded cabbage, apple cider vinegar, sugar, yellow mustard, garlic powder, a tsp of mayo.

This is about what I use. I increase or decrease the vinegar depending on the taste of others. I shred the cabbage by hand, and put the rest in the processor. I'll add onions or bell peppers when my garden is in. I always use carrots.

I like my potatoes well done for potato salad.

It depends on taste. I like onions and eggs in mine. The clasis is with mayo and mustard. I boil my eggs with the potatoes. I use one egg per medium potato. Boil the potatoes until they are soft. Dump into ice water. Skin the boiled potatoes with a fork. Crush with your hands. Same with the eggs. Stir in chopped onions, mayo, and mustard if you like. You can add sweet relish, olives, or anything that suits your fancy.

One medium potato for two to three people. You can make it for two or twenty. You can change the taste as you proceed.

It has never been a written recipe thing for me. You can make it with leftover mashed potatoes.

Ive always peeled the potatoes first then cut them in chunks and boil until soft. Then rinse in cold water. Mash with a potatoe masher, add coarsly chopped boild eggs diced pickles diced onion and mix mayo and mustard until its a medium yello. Stir all together. I love warm potatoe salad.

I use yellow potatoes(boil till most of way done, dont let them fall apart)
Let potatoes cool before you cut them.

Stuf I mix in with it is
-hard boild egg
-diced onion
-dill rllish or diced dill pickles
-pamentoes
-salt pepper and garlic powder to taste.
-mustard and real mayo add till the consistency is right. Some people like more mayo some like more mustard taylor it wo what you like.

I dont have quantities of any of it, just experiment.

My wife is under the weather and off her food. Tonight she requested potato salad. I started with two small potatoes and one egg in a small pot of water, then I remembered that she is not fond of boiled egg whites. I dropped in another egg. It came out fine. She'll make a couple of meals out of it.
