I posted earlier about harvesting two piglets last weekend at our ranch, and I wanted to show the process from where I cleaned them whole, all the way to the dinner table. Not sure if anyone will find it interesting, but I absolutely love cooking and harvesting/cooking my own food is probably one of the most rewarding things I take from hunting.

Not near as much meat on these guys as I was hoping for, but I brined overnight, then roasted in the oven for 3.5 hours. I then made a gravy from the drippings.

I'll be making pulled pork tacos tomorrow.











Cooked slow on 275 for 3 hours then blasted at 500 for 30 mins to get the outside crispy and render the fat for the sauce.

That's what I'll do next time. I tried burning the hair off with a torch and it just wasn't working with all the dang hair they have!

I wish I had the smoker at home...but I used the oven. Next time, I'll keep the skin, toss it in the smoker for 6 hours and have a feast.
