Shot this little guy last weekend and am considering making pulled pork tacos tonight. I've had him in a brine of garlic salt, garlic cloves and sea salt for about 24 hours. Any suggestions on roasting in the oven? Don't have my smoker at home unfortunately.

I would put in a covered tin and slow cook, cover it with chipotles and adobo sauce, and slow cook in negra modelo.

Serve it in tacos with cilantro and onions.

Maybe?

That sounds pretty good...I want to get the outside crispy so I made roast it first, then pull it apart and follow your suggestions

That sounds really good...It's like carnitas all over. I think I'm going to take the pulled pork I made from this pig and fry it over low heat to make carnitas tonight.
