Made these last night, man were they good.
Deer Empenadas The Filling 1 lb ground deer or hamburger 1 potato 1 large onion Jalapenos if you like it hot Taco seasoning Ketchup Garlic powder and onion powder Salsa Frozen pie crusts (the kind that unroll) And a beer! I like Shiner Bock Grated cheddar cheese
Dice the onion and potato and peppers carmelize them in an iron skillet with a little oil, then remove them from the skillet (high heat) Brown your meat in a skillet and drain any fat if you need to then add some taco seasoning, and a bunch of garlic and onion powder Once the meat is browned and the seasonings are added, pour in a beer and use a spatula to scrape up any spices, onions, etc off the bottom (that’s all good flavor) Add the onion, potato, and peppers back into the mix Add some salsa and some ketchup Keep it cookin low until the liquid has evaporated. The crust Thaw out the frozen pie crusts (unless you make your own pastry) and use a bowl or something round to cut out circles, roughly 6 inches in diameter. Spoon The mixture into the middle of the cut out pastry and top with some cheese. It helps to coat the edges with a little bit of egg, then fold the pastry over the mixture like a taco and press the edges together with a fork. Put each completed empanada on a cookie sheet with some flour sprinkled on it. Once you have put everything together, brush some egg over the top and poke a few hole in the top with a fork. Cook em until the crust is golden brown. I like mine a little crispy.
They’re great with some hot sauce.

I baked them at about 400 until they turned golden brown... probably 15 minutes maybe 20, who knows, I was drinking beers.
