Got a couple with one shot last night it was my first double. The sow was pregnant with six so hopefully that helps with he crowd control. When you guys butcher em how much fat do you trim off?

Depends on how I'm going to cook it. On the grill I try to leave as much fat as possible. In the oven it can come off because I'll wrap it in foil.


Sometimes it's hard being me! But somebody has to do it.

I usually smoke mine so I leave the fat on.

smoking I leave as much on as I can. That's flavor and moisture. Years ago the first few I killed were so lean we had to lay slab bacon over them to keep 'em from drying out on the pit. I've seen a few with healthy layers of fat, but still nothing near what a feed-lot market hog has.

Yeah the first one I killed last month was really lean but the two last night had about half an inch of fat.

leave the fat on and add some salt pork. when the outside starts to crisp wrap and cook until 190-205 and enjoy
