Simple and quick
Got the recipe from a friend at work and it is good..

Just take a Hybie Fillet cover both sides with Mayo and
Sprinkle with Tony Satcheries Creole Seasoning.
Grill on both sides till firm to the touch and that's it.
I usually over cook mine but its still tasty also excuse my spelling.

Just be sure to filet out the red meat or it will taste awful. We cook Hybrids, Stripers, and Sandies on a griddle on the grill. Just brush them with oil and dust them down with either Zatarains or Lemon Pepper.

I do the same thing but I melt some unsalted butter with some garlic salt mixed in. I brush the melted butter over the fish after I take them off the grill.
