I was traveling from Houston to Fort Worth today and went a little out of my way to a place called Blue Moon BBQ... it's about 18 East of Hearn, out in the country. It was excellent. The brisket and ribs were both on the lockhart / taylor level. The owner is a man named Rick Moore... he was very hospitable... brought me out a free rib while I was waiting... meat falling off the bone... great smokey flavor... brisket was nice and moist but you have to ask for the fatty brisket if that's what you want aka moist. My top ten in Texas right now are: Louie Mueller in Taylor Kreuz Market in Lockhart Cooper's in Llano Blue Moon outside of Hearn Smitty's Market in Lockhart Black's in Lockhart Buzzie's in Kerrville Stanley's in Tyler Whoop Boomerang in Marlin Lum's in Junction I haven't been to Franklin in Austin, Snow's in Lexington or City Market in Luling...

I haven't made it over yet, but I've had several friends state a new place in Burnet called Post Mountain BBQ was some of the best hill country brisket they had ever eaten. I will definately give it a try sometime when I am in the Burnet area. The Maxican in Burnet also has awesome brisket out on hwy 281 south just past the hospital.
I agree with those on your list above that I have eaten Lockhart and Taylor except Cooper's in Llano. It has become a haven for Austinites weekend outings, overcrowded & extremely overpriced. I have had some really good BBQ there but I have also had some not so good, rubbery, lacking in flavor ... all of which is way over priced with the invasion of the city slickers. I actually find Inman's Kitchen in Llano (1/4-1/2 mile west past Coopers on North side of hwy 29) to have much better and more consistent BBQ and I love their turkey sausage.

I would agree with your list.. but having been to both Snow's and Franklins... IMO, they are better than Louis Mueller's... With Frankin's Brisket far and away the best I've ever had. 1. Franklins . . . 2. Snow's 3. Louie Mueller's 4. Cotton's ( Robstown - burned down but I understand they are rebuilding in Corpus. ) 5. Kreuz I do not think Smitty's in Tyler or Blacks was anything special. JD Here's a pic from SNOW's

jfdawson, ive heard Franklin's is the place to go.... I wonder what he is doing to his brisket to make it so good.... I have watched a lot of his videos and he is inconsistent and very guarded with his info... understandably so... that picture makes me hungry!

Franklins was voted best BBQ in the USA by Bon Appetit magazine. It is worth the wait, everything is excellent.

Did I dream somewhere that Franklin's was a spin-off from Louie Mueller's? If so, the 2 places should be similar.
And Stanley's in Tyler is better fare under the new owners. When I was a kid growing up and the Stanley family ran it, it was pretty ordinary. Love their ribs and sandwiches nowadays....

I used to eat at the old Cotton's a bunch. It was one of the best in CC area at the time.

I can paraphrase what I read in Texas Monthly regarding Franklins spinoff of LM.
this is just the cliff notes.. Louie Mueller has a son ( john, I think ) who opened up his own place several years ago in austin. Franklin worked for John. John learned the BBQ business from working with Dad. John got caught up in alcohol/problems ( not 100% sure what ) and ended up bankrupt. months later, Franklin bought the BBQ pit from the bank that was repo'd. Franklin, using the Pit from john started up the food truck concept selling Q around 38th and I35. Business BOOMED.. Franklin opened up the store at 11th/35 about 15 months ago. Also, Franklin's parents were in the restruant business when he was growing up so he had some food services background before working for John. I'm sure parts and pieces of this story are not accurate and probably some important facts are missed but I think I got the jist of this from reading Tx Mthly.

I worked in Tyler a couple weeks ago.... went to Stanley's twice.... the brisket was dang good and the ribs were great too but brisket is how I judge them.... it was really good.

I wonder what Aaron Franklin is doing to bypass these stalwarts of Texas BBQ? I just started smoking myself.... there's a lot of room for creativity.... I've watched a lot of his videos etc.... he is pretty guarded with his info, rightfully so.... contridicts himself a lot.... I'll have to build up the gumption to wait in that line next time im down there.

I stopped by the Menger Hotel to have a beer tonight and walked down to take a few pictures of the Alamo... on the way back to the Hotel, I went down Alamo street... there was a great little spot there (at midnight) that was serving good local micro brews for only $2.50 and they have a burger truck, a tex mex truck and they also have a barbecue truck... I ordered the sausage... it was excellent... they were out of brisket. I would have been happy with that sausage at 5pm but to be able to have que of that quality at midnight......... only in Texas

Maybe I ate the wrong thing at Louie Mueller's. It was a large beef rib, smelled wonderful, had a terrific,dark crust, and was so loaded with fat that I was ill for 24 hours. The fat couldn't be cut away from the meat; the meat was permeated with fat. It tasted great, but the result was just bad. Maybe I just ordered the wrong thing.

Conifer, I like their beef ribs... but I hear you, there is a fair bit of fat.... the moist brisket is their trademark meat.

The wife and I made it over to Burnet last Saturday and tried out the new BBQ place just south of the square. Post Mountain BBQ at 310 South Main, Burnet, TX.
I had the brisket & sausage plate that also came with homemade potato salad and cole slaw and my wife had the turkey plate with cole slaw and beans.
The sausage was Myers out of Elgin but still very good. The brisket was nicely sliced, very moist with very little fat and fall apart tender. It had a nice smoke ring and really good flavor. My wife really enjoyed the turkey too. We also shared some homemade cobbler that was great!
Owners Bill & Susie Pell are born and raised from Burnet and Bill does a great job on old fashion Hill Country BBQ while Susie handles all the fresh homemade desserts and the register.
I would highly recommend anyone going thru Burnet Wednesday thru Saturday on giving it a try.

Thanks PMK... I am going to make it through there soon... heard a lot of folks crowing about it... cant wait to try it!
Today, I went through Camp Wood, just West of Leakey and North of Uvalde.... there is a great little place out here called Two Fat Boys BBQ... I ordered a pound of the moist brisket... great smokey flavor with a nice salt / pepper bark... and moist... it was really good... especially for being out here in the middle of nothing!

I read several articles about Aaron Franklin and there is one Texas Monthly article that tell you exactly how he does it. I cooked mine the same way except for two things. I now cook mine like he does. My brisket was always very good but it's awesome now.
